Palak Cream Soup
Soak the palak in water for a few minutes to get them clean then drain all the water
Chop 2 cups of chopped spinach and set it aside. Measure it, and you’ll need exactly 2 cups.
Heat 1-1.5 tbsp of oil in a saucepan or kadai and add the bay leaf to sauté for 2-3 seconds
Note that you can also use Indian bay leaf instead of bay (tej patta)
With ¼ of a teaspoon of chopped garlic, saute on low heat until lightly browned. Take care to not burn it or it will taste bitter
Add ¼ cup chopped onions to the skillet. Sauté & stir intermittently until they’re cooked down.
Add the chopped spinach, about 2 cups. Stir and season with ¼ teaspoon black pepper and salt to taste.
Now add 1 tablespoon besan or gram flour. You can also use chickpea flour or all-purpose flour or cornmeal instead.
Combine and stir to mix well.
You can include stock for more flavor or just use water
Bring the mix to a boil over medium heat
When the soup mixture has come to a boil, reduce the heat and simmer for 3-4 minutes on low to medium heat.
Add a quarter teaspoon of ground cumin powder. Mix again
Turn down the stove or remove the pot from a boiling pan, and let it cool for a little bit.
Before blending, remove the bay leaf from the soup mixture.
Making Spinach Soup
Once the soup has cooled off a bit, use an immersion blender to puree it until smooth. If you need to work in batches, just make sure you don’t heat the soup up while blending!
If the soup looks a bit thick, then add ¼ cup water and stir. The consistency should be smooth, and slightly thin.
The soup should be thin, smooth, and not too thick. To avoid a soup that is too thick, add water in ¼ cup increments and stir.If the soup looks a bit thick, then add ¼ cup of water and stir. It needs to be smooth and almost watery.
Turn the stovetop heat back on to medium, and bring the palak soup to a gentle simmer. Cook for another 2 to 3 minutes.
Before serving check the seasonings. Add more salt and pepper if needed.
Add the soup to bowls and if you feel like it, drizzle over some coconut cream. You can top with bread crouts too!
Serve Spinach soup hot or warm as a starter of light dinner with a side of any dish. You can also serve this soup as an entree with a main course of baked dishes, pasta or rice-based dishes like pulao or pilaf.
